This Keto Broccoli Cheddar Soup is so yummy and filling, you won’t even miss the potatoes! It’s an excellent low carb option for any Fall meal! This soup is creamy, delicious, and very low carb. To be clear, it has a thinner, more broth-like consistency because it does not have a roux or any thickening agents. The taste is spot on, but if you don’t add something like xanthan gum, it won’t be the thick soup you might be used to. One of the things I’ve learned through being Keto is that expectations are everything.

Yield: 4 Servings; 3/4 Cup per Serving

Ingredients

2 tablespoons Butter
1/ 8 Cup White Onion
1/2 teaspoon Garlic, finely minced
2 Cups Chicken Broth
Salt and Pepper, to taste
1 Cup Broccoli, chopped into bite size pieces
1 Tablespoon Cream Cheese
1/4 Cup Heavy Whipping Cream
1 Cup Cheddar Cheese; shredded
2 Slices Bacon; Cooked and Crumbled (Optional)
1/2 teaspoon xanthan gum (optional, for thickening)
